I don't know about you, but I love a good grilled cheese sandwich. I really don't make them often, but when I do it is quite enjoyable! Especially now with this great recipe I found in Southern Living. You really should try it:
Pesto Grilled Cheese:
2tbs. of jar pesto (already prepared, not the packet you add oil to)
1/3 cup of mayonnaise
8 slices of sourdough bread (or whatever you prefer)
Jar of roasted red peppers (sliced)
Sharp cheddar cheese slices (you can change the cheese if you want)
Mozzarella cheese slices
Mix the pesto and mayonnaise together, then spread a thin layer on a slice of bread (do it like you are buttering a slice of bread, it doesn't take much). Also you may be concerned about the pesto/mayo combo. It is delicious, it really cooks on the grilled cheese like butter. Lay the slices pesto side down on wax paper. Layer cheese and red peppers,then top off with another slice of bread with the pesto mixture. Cook it over medium heat in a non-stick skillet or on a griddle. DELICIOUS!!!

Mmmm...I had a recipe similar to this in one of my Kraft recipe magazines, and it was really good too. You've made me hungry for a grilled cheese!
Did you come up with this combination on you own? If so, you should be on food network. I would have never thought of it together, but it sure does sound good.

Sounds good to me, minus the red peppers. I love Southern Living and when Will was a baby I got hooked on the Martha Stewart Show and would try to make her recipes, even though they are usually pretty complicated. I don't think I've watched a single show since Will started walking! Ha ha
